Heirloom Cherry Tomato, Homemade Raw Cow's Milk Ricotta, Lemon Balm & Basil
We're coming quickly to the end of tomato season, maybe only two more weeks. So let's all enjoy them before they're gone. To help, here's a beautiful and delicious salad of heirloom cherry tomatoes and homemade raw milk ricotta. I'll keep this post short and sweet.
I made a small "X" on each tomato with a pairing knife and dropped them into salted simmering water until the skins just began to peel back. I removed the tomatoes and placed them in an ice water bath before carefully removing the skins.
If you're interested in how the ricotta was made just refer to a previous post from this summer. I won't bore you with it again.
The tomatoes were tossed in olive oil before being arranged on the plate. The ricotta came next. And then the basil leaves and flowers along with the lemon balm. The dish was finished with some sea salt and olive oil.
