Delice de Bourgogne, Brioche, Jarred Fig, Wild Honey
Delice de Bourgogne is a triple cream cheese from the Burgundy region of France. It is called a triple cream because, in addition to the initial amount of cream used to start the cheese-making process, cream is added twice more. This process results in a cheese that is incredibly rich and, well, creamy. This particular cheese also has a gentle pungent aroma due to it's aging process that allows a moldy rind to form.
I served the cheese with slices of homemade toasted brioche, wild honey that was infused with truffle oil and a green fig that was canned in season. Canning foods allows the seasonal eater to use and enjoy certain fruits and vegetables when they otherwise would not be available.
