This is a tartar fit for any meatless Monday. It's also a play off of a classic beet and goat cheese salad, with the greens taking a supporting role. The cheese is mixed directly into the cracker dough and not on top so that they get really crispy. The greens are micro broccoli which amazingly taste just like broccoli. The beets are Chioggia, sometimes called candy stripe, and are diced, seasoned and topped with a raw quail egg yolk. A burnt onion puree adds some sweetness to bring the whole dish together.
