I wanted to do something simple and easy to showcase these beautiful fresh berries that I got at the farmer's market. I thought that a really fresh chevre would be nice but I wanted to lighten it up a bit. I wanted this to be more of a berry plate rather than a cheese plate with a palate-cleansing feel to it.
The solution I came up with was to whip cream into the cheese. I just combined the cheese and cream and whipped them with a hand blender. This got a ton of air into the cheese making it really lite and fluffy. It was still very rich but not heavy, it worked out well.
And as you can see the berries; strawberries, gooseberries, blueberries and raspberries were just arranged around the cheese. Some local honey was drizzled on the plate and a sprig of mint from my garden
