This is a very simple and straight-forward salad incorporating whipped feta cheese for a subtle twist. If you're a wine drinker, this is something you can pair with a funky full-bodied white or a light earthy red. Think Rhone Valley or Burgundy. This salad definitely has some strong flavors with the from-the-earth flavor of the beets and kohlrabi being accented by the spicy bite of the shaved radish.
I oven roasted the beets and kohlrabi til they were just tender enough to pass a knife through. I peeled the beets and sliced the kohlrabi in half, scooping out pieces with a melon-baller. The radish was sliced very thin with a sharp knife.
The whipped feta was made by blending the cheese with some heavy cream and milk until completely smooth and then chilling for an hour to firm it up.
