Here is a dish that I just found in my archives that I never posted. I think it is from May or June, sometime during the height of strawberry season. It is a French yogurt cake, a much healthier version of a classic sponge cake. The recipe substitutes yogurt where you would usually be using a lot of oil.
Other than the fact that I subbed yogurt in the cake I can't really remember how I made this cake.
I macerated the diced strawberries in sugar to soften them up and release some of their juice. I used my usual ice cream recipe, substituting raw organic goat's milk for cow's. Raw milk is milk that hasn't been pasteurized. It's a bit controversial because if there are any bad bacteria in the milk they could make you sick. However, proponents of raw milk argue that pasteurizing milk also kills a lot of the good bacteria and nutrients. But seeing as I make my ice cream with a stirred custard that is heating I guess I'm kind of pasteurizing it anyways.
I made an orange syrup, or glaze, by cooking fresh-squeezed juice from Valencia oranges with some sugar. Once the glaze cooled I dipped the cake into it. I garnished he cake and ice cream with
