The honey that I used for this dish and most other preparations comes from Urban Apiaries here in Philadelphia. They collect the honey from urban rooftops throughout the city which are lent to Urban Apiaries from regular everyday citizens of Philly. This is part of a recent movement in many cities across the country that is trying to address "Colony Collapse Disorder" or CCD which was identified in the US in 2006. This is a phenomenon where the worker bees (pollen collectors) just simply vanish from their hives leading to the eventual collapse of the entire hive. There are many theories on why this is happening, from pesticide use to cell phone towers. Whatever the cause may be the results are very devastating, and not just for the honey industry. Bees are the main pollinators of millions of plants. If the bees aren't around to pollinate flowering plants, they will not produce their fruits and vegetables. So providing new homes for bee colonies on city rooftops or suburban backyards is doing the bees and the rest of us a lot of good.
The panna cotta contains raw goat's milk, honey, chamomile and gelatin. The chamomile was steeped in simmered milk and then strained. The honey was mixed in and then the gelatin was added. The mixture was poured into ramekins and chilled for 3-6 hours until it was set.
I made the granola by stirring melted honey into a mix of chopped almonds, kamut, oats, barley, flax seed, rye, wheat and triticale. I spread it out onto a parchment lined sheet and baked it for about 20 minutes. Once it was chilled I crumbled it into pieces.
To finish, I drizzled the plate with some of the raw honey and garnished with chamomile flowers and some of the leaves.
