There are 2 different cheeses seen here, "Sanford" (on the left) and "Eugene" (on the right). The Sanford is a soft gouda-style cheese that is very creamy and mild. The Eugene is a natural-rind tomme-style cheese that has slightly firmer texture from aging and a mild nuttyness. Both of these cheeses are made with raw milk.
Below the cheeses on this dish is a fig puree made by cooking dried mission figs in balsamic vinegar and red wine before pureeing and passing through a fine mesh strainer.
The red and green lettuce along with the alium, bok choy and catnip flowers were used to emphasize the diet of the goats which is tasted in the cheese.
