I didn't just throw flowers all over this soup because I thought they would look pretty. They do look nice but they also taste really good and add a really nice element to the dish. These particular flowers are called "nasturtiums" and they have a very subtle peppery flavor similar to watercress.
This was a pretty simple and straight-forward soup made by pureeing cooked carrots and ginger with sour cream and milk and then, obviously, chilling it before serving.
I made the "dirty snow" by whisking sweet soy sauce into buttermilk and freezing it. Once it was frozen solid and just before serving, I raked a fork across the surface to make the snow. And I topped the soup with the flowers, micro greens and orange oil.
