Peeling chestnuts is a giant pain in the ass. They need to be roasted or boiled and peeled while still hot. It's takes a while and it burns. So my suggestion would be too find peeled chestnuts.
Once peeled, I cooked the chestnuts in chicken stock with leeks and some potatoes. I pureed these and ran them through a mesh sieve. I thinned the soup out with some cream, butter and stock until it reached a nice creamy consistency.
The soup is topped with some dried cranberries chives and a brown sugar & nutmeg sour cream.
