If you've been following my blog over the last few weeks you may have noticed apple cider popping up in dishes frequently. This would be because I love apple cider. I can find a way to put it in almost everything; soups, sauces, dressings, cocktails and desserts. In this case it is reduced to a syrup and added to a doughnut batter.
This is a "cake" doughnut as a opposed to a "yeast" doughnut. It is leavened with baking soda and baking powder instead of yeast. The dough is rolled, punched out and deep fried. It's dipped in a glaze made from apple cider and powdered sugar. The doughnut hole is rolled in cinnamon & sugar. Next to the doughnut is a maple ice cream, it is really addictive.
