Making angel food cake is a great way to use up egg whites. And after making pasta and mayonnaise I tend to have a lot of extra egg whites in my refrigerator. It's also fat free and very simple to do. It's essentially three ingredients; egg whites, sugar and flour. You can also add something to flavor it like vanilla extract, (which I use) or citrus zest. I also use some cream of tartar to stabilize the whites.
After baking and allowing the cake to cool I punched out some rounds and sliced them. The sauce on the plate is a satsuma plum jam. The cake is layered with whipped cream that had some of the jam folded into it.
