This is not a mixed-greens salad, but rather a salad made of green things, 11 different ones to be exact. After getting home from the farmer's market this past weekend I realized that I had quite a few green vegetables. So I decided to use all of them in one dish. Even though everything is the same color, I think the slight contrast of greens with a little splash of yellow really made this a nice looking plate.
You can tell that I didn't really mess with the ingredients here. Aside from pureeing the sorrel to make the foam, slicing some of the veggies and blanching some other I left them as-is. Under all of the green is also a lemon vinaigrette. All of the specific green things I used are listed below.
